(bows low) Why, let me tell you then, if you seek to know.
Most people are aware of the discrepancies between "American" and "British" English (I know you do, Padawan). The spelling "center" is associated with the American ways, and "centre" is likewise British.
The end. (grins) And since I've decided I'm a Loyalist (I am a citizen of the Commonwealth, after all), I generally stick to British spelling, which is why one may note I currently spell it "centre", and not "center".

When writing a cut off dialogue sentence, ei:
Which one's correct? Or are none of them? I personally think the middle one's most proper, but you can get away with ellipseses.
Is it permissable to begin a sentence with "and" "but" "however"?
Is ending a sentence with a preposition allowed? "And so he stepped in."

I would go with the second option, for the smacking bit. The first option would do better with less abruptness, if it were something like:
Second option works nicely for smacks, shots, thwacks, and sudden smiting or movement of any kind.
Third one is grammatically incorrect. To remedy it, I'd go with something like:
Even so, I personally still don't really like the way it's laid out...it would go better if the "is" was omitted, too. It might work better all around if we went with the dash again:
Many grammar books strictly outline that one must never begin a sentence with "and", "but", or "however". I think this is 95% due to the fact that when a student gets used to doing that sort of thing, they'll get into the habit of using incomplete sentences, like so:
No...NOOOOOOOO!!!!!!
However, the word "however" is a bit different from "and" or "but".
Technically, I believe that is correct. I would want to replace the first period with a semicolon to patch it up a bit, though.
...Whew. That was close. I just about went into a lengthy babble regarding the proper use of the semicolon.
But anyway.

"And so he stepped in" is an incomplete sentence...of course, I know you knew that...but it isn't the kind of painfully inept incomplete sentence that should be absolutely banned from mention (i.e. it's permissible in writing styles, for the uninformed). As long as one is careful to keep structure either correct, easy to read, or preferably both, I don't think ending with prepositions is too much of a problem. 'Course, it's always nice to know what he stepped into, but that's another tangent as well...snrk. And oftentimes the thing he's stepping into has already been mentioned, so avoiding a bad repetition by ending with a preposition would be preferable over saying something like:
Box, box, box. Too much box.
(I realise that ye, Finnity, will already contain knowledge of much of this...but I expanded anyhow for the good of all. At least, I hope it will have been good.)

((the only reason I asked when I already knew the answers was to amend the horrors that have been tossed upon thy thread. Heh heh. And, of course, I've never used any of those sentences, I just sort of came up with ones to demonstrate my quiries.))
HOWEVER...
The prepositional ending was used somewhere in TSG, and Word was glaring at me. I have to find it, because I know it was a bloody complete sentence, because I wasn't using the proposition as a prepositional phrase... snrk.
And I simply like ellipseses, but I would never have used it in that place... were I actually writing something of MERIT. Heh heh.
